Today began with a delicious bowl of overnight oats: 1/3 cup rolled oats, 1/2 cup vanilla Oikos, 1/3 cup almond milk, chia seeds, cinnamon, and dried blueberries.
Topped with Justin's plain almond butter.
Love this breakfast.
Work lunch at Mi Cocina today! Chips and salsa to start, then shrimp tacos!
Everything about these tacos was fresh and tasty, EXCEPT for that dark brown sauce.
Nasty.
I don't know WHAT that was.
Shudder.
I came home after a long work day to a happy puppy and a HARD Insanity workout.
INSANITY UPDATE: I will be 1/4 of the way through the 60 day challenge tomorrow! It has been seriously hard but amazing. I am sore in places that I didn't know could be sore. I love it.
I also decided to bust out the quinoa again for tonight's dinner. I purchased a bag of TruRoots organic (pre-rinsed!!!) quinoa the other day and am obsessed. So good, so easy, and packed with nutrients.
I cooked 1/2 cup quinoa in 1 cup chicken broth, while simmering the "meat" for taco salads!
I heart taco salads.
While the quinoa cooked, I heated about 1 Tbsp olive oil in a saute pan, then added:
3 cloves minced garlic
1 cup frozen sweet potatoes (cubed)
1 can corn (drained)
1 can black beans (drained)
1 can pinto beans (drained)
1 can rotel with juice
1/4 cup pickled jalapenos (diced)
1 packet taco seasoning.
Simmer on low (you may have to splash it a few times with chicken broth if it seems too dry), and serve over fresh spinach.
Top with sour cream, cheese, salsa, and tomatoes! YUM.
Tomorrow is FRIDAY! How exciting.
I am definitely excited since I just told my husband that he needed to plan a surprise for me on Saturday. Makes total sense.
I am sort of hoping for a movie date to see The Words and possibly something delicious to eat... :)
